Taste Waterford

Taste Waterford promotes food and drink producers along with the retail and hospitality sectors throughout the county. It provides the Waterford food community with a platform for networking and to showcase their products.  Today we have a collective from our Waterford food community along with some guests to chat about all things food.

These talks have been curated and will be presented by Richard Povey.

11am Fergal Walsh – Dún Artisan Bakery

The Dún Artisan Bakery has been creating exceptional feedback for their bread and pastries since launching in 2021. Fergal Walsh will expertly talk about authentic sourdough baking, and why using local and seasonal ingredients is so important. There’s also a chance to try their delicious food – don’t miss out!

12pm Niamh Condon – Dining with Dignity

Niamh is an expert on cooking for people with Dysphagia – difficulty in swallowing food. Her insightful demo shows how traditional food can be suitable for people with this condition, affecting eight per cent of the world’s population.

1pm Cáitlín Uí Aodha and Alberto – IASC Seafood Bistro

Cáitlín Uí Aodha and her family have been fishing from Helvick Head for 150 years. She and her chef Alberto will create an exciting fish dish which will offer wonderful tastes and stories of the sea.

2pm Tom Dauber – Dungarvan Brewing Company

Tom Dauber, new owner of the Dungarvan Brewing Company, will talk about their award-winning beers and future. And with a chance to taste some of their beers, it’ll be a fascinating demo on why the Dungarvan Brewing Company has gained recognition on a global stage.

3pm Shane Smith – award-winning pastry chef

Shane Smith has over 25 years’ experience working in some of the most celebrated pastry kitchens in Ireland and abroad. He’ll be “Spring Baking”, where recipes will offer food stories, and excite your taste buds!

4pm Marie Power – The Sea Gardener

Marie is super passionate about all things sea, foraging on the Copper Coast, and cooking, and will create an exciting dish of vegan Bombay burrito with organic Irish seaweed.
